in the folder for winter assault/DoW there is a folder called 'playback'.. is it possible to record games that you play?.. and are they stored here?

Yes, it is. At the end of a game, click "save replay".
To watch a replay, go to the load game dialog and select "recorded games" instead of "saved games".
