The game starts out quite well for me, and I get full map control, but then he starts beating me back, what did I do wrong?

You're pretty good - it won't take much for you to be very good.
Three things:
1. Cut off resources. There are a few quick-to-capture strategic points that cut off almost all of his resources. Get to know them, and take them. A lot of times you got area control, but it took too long to cap the fuel and munition points. Cut him off first, then clean up.
2. Even though he went Air, you still need to use your T3 units more. I know Ostwinds are great, but it's just not worth the resources to tech up in a 1v1. If you'd stayed with T3, used them well, you'd have won IMO. Remember: you just need to nail enough bad guys to get 5CP and you've got heavy armour anyway. In the mean time use pumas and stugs. Pumas especially like to be paired - they can suppress and kill infantry fast enough to avoid damage.
More than anything else, it was your failure to capitalise on T3 that lost this for you. Get the advantage, press it damn hard, and use the Tiger Ace to mop up.
3. Stop letting the other guy hit your rear armour! It makes a huge difference, especially against Air infantry. Even Pumas - they can drive pretty fast backwards, and they cost nothing to repair. Hit and run, hit and run, rack up the CPs.
