Yeah that was great use of a motorbike to turn many battles in your favor, but did that guy just give up or something?

quick fight, the 1 squad of volks and motorbike annihilated those 2 rifleman squads, on that left hand side. He seemed to retreat at every battle.

I always find the motorbike hard to micro, as usually too busy microing other troops

Not really. Just set it up at medium-long range, perpendicular to his troops (or behind)...basically, just get the bike to nullify his cover.
